Cheesecake Recipe !!!

Ok, I know I have been posting alot on Facebook about Cheesecakes here lately.  Matt LOVES cheesecake.  Last year I made him a homemade cheesecake and he hasn't let the thought of that cheesecake go since...LOL!  Well, I thought I would share my cheesecake recipe with ya'll since it's close to Thanksgiving.  Yes, there are some short cuts I make.  I buy the premade graham cracker crust.  I have no patients with crust whatsoever.

Jeani's Cheesecake Recipe

2 Graham cracker crust
5 8oz Cream cheese
1 3/4 cups sugar
3 tablespoons all purpose flour
Zest of one lemon
As much lemon juice you can get from half a lemon
6 Large eggs

Ok, this is where it got tricky for me.  Our oven doesn't work right, so I used a toaster oven.  Most recipes say preheat to 550 degrees F, I set ours for 450 degrees F. 

Blend together the cream cheese, sugar, flour and zest with an electric mixer until smooth.  In a separate bowl, mix together the eggs and lemon juice.  When the cream cheese mixture is smooth enough, add the egg mixture a little at a time until completely mixed.

Add to your pie crust and bake for 12 minutes at 450 degrees F.  After 12 minutes, turn the oven down to 200 degrees F and bake for an hour.  I checked the cheesecake like any other cake with the "put a knife in the middle and if it's clean, it's done" method.  If it is done after an out, take it out and let it sit on the counter for about half an hour.  Then, what I did was put it in the freezer.  I think it was in there for about 2 hours.  Matt had to take them to work that night, so it didn't sit in the refrigerator for the customary 6 hours.  And it was frozen on his way to work (an hour away) so it didn't spill!

In the next batch I'm going to do, I'll make one of them a chocolate-peanut butter swirl.  I haven't figured out how much chocolate and peanut butter to use yet, but what I will do is after I mix the batter, I'll divide it for the two pies.  Then while one is baking, I'll divide the half and mix chocolate to one, and peanut butter to the other.
